DETAILED COOKING TOURS (HALF DAY)
We begin the day (8:45 a.m.) with a drink at the Hai Scout Cafe, which serves as our gathering place. We next proceed to Hoian’s vibrant market. Explore the market and talk to local merchants to get some fresh ingredients for today’s culinary session. Then, take the Red Bridge boat for a 25-minute journey down the Hoian River to the Red Bridge Cooking School. Before beginning your cookery course, explore the school’s herb and vegetable garden. The program lasts around an hour and 15 minutes and includes demonstrations from the school’s chefs as well as an opportunity to assist in the preparation of traditional meals. Enjoy an introductory instruction in the art of Vietnamese food carving at the conclusion of class (plate decoration).
Recipes (our food contains no MSG):
1. Fresh Rice Paper Rolls of Shrimp – including the making of rice paper
2. Oyster Ginger Sauce
3. Warm Squid Salad served in half a Pineapple
4. Grilled Eggplant stuffed with Market Vegetables
5. Sweet & Sour Sauce
6. Hoi An pancakes (Banh Xeo)
Lunch includes the above meals as well as: Steamed Ocean Fish on a bed of freshly chopped vegetables (not included in the demonstration). A vegetarian lunch can be provided on request. Finish at approximately 1:00 pm – transfer back to central Hoian.
